chicken curry recipe Indian simple easy-Chicken Kosha
These chicken curry recipe which I will share with you all, that is a special and very popular dish in Bengali cuisine. as I'm a Bengali person and I love Bengali Indian foods. So I will share this delicious chicken dish which has also another name is Chicken Kosha. It is a very famous dish around the world today. This recipe can be made by some simple ingredients, and after making it surely comes out a mouthwatering dish.
Cooking time: 45minutes
serve person : 5 person
Ingredients:
Chicken curry cut - 1kg
Capsicum - 3 piece big
Ginger paste - 2tbsp
Garlic paste - 2tbsp
Tomato - 3big piece
Tomato ketchup - 2tbsp
Onion paste - 3 piece onions paste
Onion slice - 2pice onions slice
Cumin powder - 1tbsp
Coriander powder - 1tbsp
Red chilli powder - 1tbsp
Turmeric powder - 1tbsp
Whole black pepper - 5 to 6 piece
Cardamom - 3 piece
cinnamon stick - 1 piece(2gm)
Cloves - 2 piece
Bay leaves - 1 piece
Mustard Oil - 15ml
Green chilli - as you wish
Salt - to taste
Sugar - 2tbsp
Cooking Method :
- First, make a paste of capsicum, tomato, onion, ginger, garlic and green chillis, all together. Now keep aside the masala paste.
- Now take a big Kadai or pan heat oil put cardamom, cinnamon, cloves, bay leaves, and whole black Pepper as mentioned on ingredients section. (Please follow the number of spices which is given up there don't add more than the written quantity).
- Wait for crackling sounds and raw flavour goes away,
- Now add sliced onion into the oil & spice. Saute until sliced onions become golden brown.
- Now add sugar & the powder of coriander, cumin, red chilli, turmeric, and tomato ketchup, saute them for few seconds.
- Now time to add that paste of capsicum, onion, ginger, garlic, green chilli, tomato, in the Kadai.
- saute and mix them well in Kadai at medium flame.
- Now cover the gravy masala and simmer for 15 minutes at slow flame. (just keep in mind that masala didn't stick to the bottom of the pan or Kadai in this time).
- After a few minutes later add chicken pieces into the gravy masala now for getting the best chicken curry you need to be careful from this time.
- Cover the chicken gravy at medium flame and you have to run ladle into the chicken gravy after 4 minutes later. Do this process continues until chicken becomes tender and gravy leaving oil.
- Do not add water into the chicken, chicken already has water so don't need water in the chicken gravy.
- When you see beautiful colour and aroma comes out from the chicken gravy, and all the oils of chicken are leaving on the gravy surface that means your chicken Kosha or chicken curry is absolutely ready.
- Serve with polao or basmati rice.
