Chilli chicken dry recipe | How to make easy dry chilli chicken
This dry Chinese chilli chicken is an absolutely lip-smacking appetizer. This dish actually salty-sour and spicy hot in taste. But I make it, little sweeter, with tanginess & spicy hot in my recipe. This recipe great at every occasion, but a perfect appetizer for a cocktail party, without it, can't imagine the party. The combination of garlic and ginger red chilli paste with Chinese sauces make this dish just awesome. Ingredients:
(For Marination)
Chicken boneless - 600gm
Vinegar - 1tbsp
All-purpose flour - 4tbsp
Corn flour - 6tbsp
Ginger paste - 1/2tbsp
Garlic paste - 1/2tbsp
Soya sauce - 2tbsp
Red chilli sauce or paste - 1 tbsp
Red chilli powder - 1tbsp
Black pepper powder - 1tbsp
Egg - 1 piece
Salt - 1tsp
Oil - for frying
(For the sauce)
Fish sauce(optional for good aroma) - 1tbsp
Chicken broth powder - 1tbsp (optional for the better taste)
Soya sauce - 2tbsp
Green Chilli sauce - 2tbsp
Red chilli sauce - 2tbsp
Honey - 1tbsp
Tomato ketchup - 4tbsp
Vinegar - 4tbsp
water - 1/4 cup
(For the stir fry)
refined oil - 3tbsp
salt - to taste
Chopped green chillies - 4 pieces
Chopped garlic - 2tbsp
Chopped ginger - 1/2 tbsp
Onion - 3 pieces (1inch squares)
Large coloured capsicum - 2 different colour (1inch squares)
Spring onions - 3 to 4 chopped for garnish
Cooking & Preparation Method :
- In a large bowl mix, all the marination ingredients listed under marination section ( soya sauce, egg, ginger paste, garlic paste, red chilli sauce, red chilli powder, salt, black pepper powder, vinegar, mix the ingredients with chicken and then add chicken pieces to coat the spices properly. Now add cornflour and all-purpose flour into the marination and coat them to chicken pieces. Leave is with cover for about 1 hour into the fridge.
- Now Chop the spring onions & cut the onions and colour capsicums into 1-inch squares, keep aside the veggies.
- Now take a big Kadai to add oil for frying the marinated chicken pieces.
- Heat oil for deep fry at least (350℃ F). Now fry the marinated chicken pieces into batches for about 4 to 5 minutes.
- While you see the colour of chickens are getting golden brown move from the frying oil keep aside. (do not fry them too long otherwise chicken pieces get rubbery)
- Now take another Kadai heat 3 tbsp oil and stir fry the veggies with added chopped ginger, garlic and green chillies. After few minutes of sautéing them add soya sauce, fish sauce, chicken broth powder, green chilli sauce, red chilli sauce, tomato ketchup, honey & salt(add very less), sauté them for 5 to 6 minutes at medium flame.
- Now put 1/4 cup of water in to stir fry veg mix all the ingredients with water and cook them for 5 minutes at high heat.
- When water dries out add fried chicken pieces and tosses into sauce and veggies for 4 to 5 minutes.
- Finish with vinegar and chopped spring onion to mix them for few seconds.
- Serve hot with fried rice or cocktails.
