Chicken Caesar salad | How to make classic Caesar salad
Caesar salad is one of classic old age salad which was created by Caesar Cardini in 1924 in Tijuana. where Cardini had opened a kitchen to attract the Americans who were frustrated by prohibition. Once there a busy weekend Cardini's kitchen was running short of ingredients and threw out some leftover foods and ingredients than one salad order comes there, so they made the salad with some few ingredients like iceberg lettuce, olive oil, raw eggs, garlic, parmesan cheese, and some more ingredients. After that salad was famous then and there. Today I will share the classic recipe of the Caesar salad.
Preparation time : 20 minutes
Serving : 2 persons
Ingredients :
(For salad dressing)
Raw eggs yolk- 1 yolk only (chilled)
Olive oil - 25ml
chopped garlic - 5gm
finely grated Parmesan - 10gm
Canned Anchovy fish - 1 piece
Lemon juice - 5ml
Crushed Black pepper - 2gm
Dijon mustard - 1/2 tsp
salt - to taste
(salad ingredients)
Iceberg lettuce/ romaine lettuce - 1 pc big
Beacon strips - 4 pcs
Grilled Chicken breast - 1 pc (grilled with olive oil, dijon mustard, and thyme, black pepper)
Bread croutons - 10 to 15 pc
Cherry tomatoes - 6 pc
Parmesan cheese shavings - 15 gm
(For croutons)
Olive oil/butter - 2tbsp
Chop garlic - 2tbsp
Chop thyme - 1tsp
Preparation method/Cooking method :
- First, make croutons, cut bread into small cubes then mix with olive oil chopped garlic, and chopped thyme to the bread cubes. Now bake them at 160℃ for 8 minutes. When the golden brown colour coming to croutons that means croutons are ready. keep aside for later garnish.
- Now take a big container put some ice cubes and water in it, when the ice gets melted and water becomes chill. Break the iceberg leaves and put it into an ice-chilled water container for an ice bath(It is necessary for crispy fresh lettuce). Leave it for 10 minutes and then put all soaked lettuce into the strainer for removing the water from the lettuce leaves.
- For the dressing take a round bowl, add chilled egg yolk, lemon juice, & dijon mustard, mix them together for a second now take a whisk mix the bowl ingredients with olive oil drop by drop. continue whisking until oil fully absorbed into the egg yolk mixture, and remember to whisk only onside circular motion. At this time Emulsification started and you get handmade mayonnaise. Now add salt, canned small anchovy fillet, chop garlic, finely grated parmesan cheese, and crushed black pepper to it mix the ingredients with mayonnaise to get Caesar dressing.
- Now take a mixing bowl to add the desired quantity of dressings and crispy fresh lettuce and mix them by slow hand.
- Put into a plate garnish with crispy bacon and grilled chicken and finish with Bread croutons, Cherry tomatoes, and parmesan shavings.
