Sukto Bengali dish recipe |mix veg curry | Bengali delicacy curry

Shukto is a Bengali delicacy vegetable curry recipe. Which is very popular in the Bengali community. Once in a story where a queen who does not know how to cook Bengali foods, and she added chillis to Shukto veg curry and ghee to the chutney. And this funniest thing she has done it. But I have grown up following my Ma & thakurma cutting and chopping vegetables with ease followed by cooking a huge batch of Shukto. For me making Shukto is nothing difficult almost every time. I really need this dish every Sunday at launch, because I love the Bengali shukto & no other curry is required with this dish for me to completing my launch. So today I will share the Bengali shukto recipe in an easy way which becomes great.

Bengali shukto



Cooking & preparation time : 40 minutes


Servings: 4 persons





Ingredients:

  • Potato - 100gm
  • Sweet potato - 100g
  • Raw Banana/kachkola - 100gm
  • Raw papaya - 50gm
  • Drum stick/Sojne-danta - 100gm
  • Flat beans/Sheem - 100gm
  • Bringle - 1piece medium
  • Bitter gourd/korola - 50gm
  • Bori -  20 pieces
  • Mustard paste/sorse bata - 1tsp
  • Bay leaves - 2 piece
  • Panch Foron/Bengali five-spice - 1tsp
  • All-purpose Flour - 1tsp
  • Milk full fat - 150gm
  • Salt - to taste
  • Sugar - 1.1/2tbsp
  • Radhuni/wild celery seed - 1gm
  • Ghee - 10gm
  • Crushed tender coconut - 30gm

Cooking Method :



  • First, wash all the vegetables and cut them into wedges.





  • Then parboil the sweet potato, sheem, potato, raw papaya. after parboiling keep aside them.





  • And lite fry the Bringle, raw banana, bitter gourd, bori, and keep aside them too.





  • Now temper bay leaves & Panch foron in leftover vegetable frying oil.



  • sauté the spice for 1 min at low flame. Add ghee in spice.





  • If Kadai masala dries out, add a splash of water from parboiling veg. and keep sautéing for 3 minutes.



  • when you get to know that the smells of raw spice goes away add parboiled potato first.



  • Cover and cook on the low flame at least for 3 minutes.



  • Now add the rest of the parboiled vegetables, along with fried bori & raw fried banana,



  • Mix them with spices and add salt and sugar. Add crushed coconut and mix with vegetables.





  • Now add water from boiled vegetables, now add fried Bringle, fried bitter gourd mix gently.



  • Now mix all-purpose flour with full-fat milk and put this mixture into Kadai veg.





  • simmer at low flame until all vegetables are fully cooked (5 to 6 minutes).



  • Finish with 1tsp of ghee over the Shukto.



  • Cover shukto and rest until serving. serve with basmati white rice.
