French fries recipe
Some peoples are claiming that French fries invented in Belgium, their villagers beside the river called the Meuse traditionally like to have fried fish with fried potato.... and this is a dish discovered by American soldiers in Belgium during world war 1 since the dominant language of southern Belgium is French, so They dubbed the testy fired potato as "French fries", these french fries are made by potatoes and mixed with fresh or dried herbs, salt & pepper. Nowadays this dish is famous everywhere in the world, mainly in America, from kids to old men everybody likes it very much. I will reveal my secret recipe for these french fries here, which you will definitely love. That would be more crispy than the normal french fries.
Cooking time: 1 hour
Serving portion: 4 portion
Ingredients:
Potatoes -3 large
Oil for fry - 1 litter
Smoked paprika - 10gm
Salt - to taste
Pepper powder - 5gm
Corn flour - 2 tbsp
Parsley - 5gm
Mayonnaise/Tomato ketchup - as required
Cooking Method:
- First, wash the potatoes peel & put them into water-filled bowel to preventing of oxidation & discoloration.
- Now cut the potatoes into french fries shape and soaked in water, after cut all the potatoes wash them into the water for removing the surface starch of the potatoes. until all starch goes away from potatoes. 3 wash is enough.
- Here is a secret step "do not boil the potatoes just heat the water at 75℃ before boiling point and put cut potatoes and stir them continuously. You can see the starch of the potatoes is floating on the hot water, do it for 10minutes, while stirring do not break the potatoes.
- Now at low flame leave potatoes for 15 minutes in the hot water. (this process for activating the pectin inside of the potatoes which prevents early soft & brown color while frying the potatoes).
- Now again boil the potatoes in freshwater by changing the cloudy hot water. Boil the potatoes at 80% in high flame.
- Now strain out the boiled water. Dry cut boiled potatoes by napkin papers or keep under the fan. until proper dry the potatoes.
- Now coat the boiled potatoes with cornflour.
- Now heat the oil at a medium flame. Fry the french fries for 5 minutes.
- Move out all french fries when you see a crispy coating comes on to french fries. Remember that the frying process does not end now. Still, we have other things to do, do not fully fry the potatoes.
- Now deep freeze the half fried potatoes for at least 6 to 7 hours. The more you freeze the more you get the crispiness of the fries.
- So all process is done now finally fry the frozen french fries at the high flame in oil until golden brown french fries you get.
- Mix the herbs, parsley, salt, and pepper with hot french fries, and serve with mayonnaise or ketchup.
