Dum Aloo Recipe | Bengali Special Niramish Aloo Dum
These Niramish Alu'r dom is representing Bengali image & culture. This popular classic niramish dish of little sweet and spicy curried potatoes, commonly known as 'aloo dum' or 'dum aloo'. This dish very famous in between puja time or winter time when new baby potatoes are harvested. This dish best enjoys with "korai sutir kachori" or "pulao" or "Bengali fried rice". This simple recipe makes no use of Onion & garlic.

Cooking Method :
- First Wash the potatoes and cut them into 1/4 each pcs. or you can use the whole potatoes.
- Now fry them in mustard oil for few minutes until light golden brown.
- Keep aside the fried potatoes. now make a paste of water-soaked cashew nuts, melon seed & raisins with added water, after getting the nutty paste, keep aside the paste.
- Now make a paste of tomato as well as keep aside the all pastes for later use.
- Now take that same oil where potatoes are fried, turn on the gas flame, temper dried red chilli, cumin seeds, cardamoms, cinnamon, cloves, bay leaves, for few seconds when the crackling sounds come add turmeric, Kashmiri red chilli powder, cumin & coriander powder.
- Sauté well until oil leaves from the spices, do at medium flame.
- Now add ginger paste and green chilli paste and tomato ketchup now sauté well for 2 or 3 minutes.
- After sautéing the spices very well add cashew, melon seed and raisin paste into the masala. sauté for 5 minutes.
- Now add salt, sugar, & raw Tomato paste and lemon juice.
- Now sauté for 5 minutes and add fried potatoes into the spice masala.
- keep sautéing them for 10 minutes at medium-high flame.
- Add blanched green peas optional, continue sutéing for few minutes.
- Now add garam masala powder & hot water into the masala, cover with lid & simmer for 15 minutes.
- Stir frequently until get smooth & reach gravy.
- When you see the gravy little dries out, add Ghee into the Alur dom.
- Finish with fresh cream and dried Kasuri methi just mix them in low flame for 20 seconds.
- Move away the Alur dom from flame.
- Your Bengali alu'r dom or Dum aloo niramish is ready to serve with korai sutir kochri or Misti polao or Bengali fried rice.
