Bengali Bhetki Paturi Recipe | Bhetki fish in banana leaf parcel

Bhetki paturi, or bhetki mach'er paturi in banana leaf is very famous in Kolkata India. This is the old age culinary technique of cooking food wrapped in leaves, on charcoal, or in Tawa. It has another name called "Patra ni Macchi" popular in the Parsi community. This fish paturi is actually originated in Dhaka Bangladesh but now has become a signature dish of Bengali cuisine. This basic bhetki paturi marinade with fresh mustard paste, green chilli, turmeric, mustard oil & salt. And many more spices which I will tell in the recipe. And the fish fillets are individually wrapped with medium-small banana leaves. If you want smokiness into your fish paturi then you should cook them into the charcoal oven.

Bengali Bhetki Paturi




Cooking time : 40 minutes


Serve portion : 10 persons



Ingredients:

Bhetki fish fillet - 1kg(you can use Basa fish if you won't found bhetki fish)

Salt - to taste

Mustard seed - 100gm

Green chilli - 30gm

Turmeric - 3tbsp

Mustard oil - 50gm

Melon seed paste - 50gm

Hung curd - 200gm

Grated fresh coconut - 1cup

Sugar - 1tbsp

poppy seed - 50gm

Gandharaj leaf - 3 pieces (cut into small pieces)

Banana leaf - 10- 15 pieces

Cotton thread - as required

lemon juice - 2tbsp

Slited green chilli - 1/2 for each paturi



Cooking Method :




  • At first, wash bhetki/basa fish and cut into square pieces 2inch size would be good





  • Now soak mustard corn (yellow 50% - black 50%) in normal water at room temperature. Also soak poppy seeds, melon seeds, together. for 20minutes.



  • Now put mustard corn, melon seeds, poppy seeds, green chilli, turmeric, lemon juice, salt, sugar,  and 5 tbsp of water in the grinder and make a smooth semi-dry paste of the spices.





  • Now mix these spice paste with hang curd and grated coconut and mustard oil.



  • Marinate the fish fillet with this spices mixture and keep it for 3 hours in the fridge.





  • Now toast all the banana leaves in Tawa for few seconds, coz they don't crack while you cook or bind the fish. (use few drops of mustard oil while doing the toasting the leaves a little bit).



  • After 3 hrs of marination put marinated fish on a small banana leaf along with one Gandharaj leaf & slited green chilli and few drops of mustard oil. The marinated fish fillet can be individually wrapped into a small parcel.





  • Now bind the parcel by a cotton thread, and cook them into the charcoal oven or in Tawa for 20minutes.  





  • Your Bengali Bhetki paturi is absolutely ready for dinner or lunch. Enjoy the dish with plain rice or pulao.
