Mushroom soup recipe healthy

Soup is very good for health and it is tasty too, we all love to have soup whenever we go for dining outside or at home today I'm sharing with you one very delicate soup recipe which is creamy mushroom soup healthy edition, so let's start the recipe.

Mushroom soup


Ingredients:

Button Mushroom(thin sliced) - 300gm

Shiitake mushroom(dried) - 50gm(soak for at least 1 hr)

Porcini mushroom(dried) - 10 ml

Porcini water - 100ml(dried porcini soaked in hot water called porcini water)

Water - 150 ml

Butter - 10 gm

Fresh Cream - 50 ml

Thyme- 10gm

Rose merry - 5gm

leek(chopped) - 20gm

Celery(chopped) - 30gm

Garlic clove - 10gm

whole peppercorn - 5gm

White pepper powder - 3gm

Bay leaves - 1 piece

Milk - 50ml

Salt - as required

Truffle oil - 1 ml

Garnish - sliced fried mushroom, few drops of fresh cream, and truffle oil.












Cooking method


  • At first, get a saucepan to add butter, and melt it on low medium flame



  • Now put bay leave whole peppercorn, thyme, garlic, rose merry, sauté until crackling sounds come.



  • Now add chopped celery and leek into the sautéd herbs,



  • Now add slices of button mushrooms, soaked shiitake mushrooms, sauté well in medium flame. Sauté till soften the mushrooms, 



  • You can see water released from the mushrooms continue to sauté until water from the mushrooms is fully evaporated.



  • Once water is 70% evaporated from the mushrooms now put soaked porcini mushrooms in this and continue to do sauté.



  • Now you will get a delicious aroma from sautéing mushroom mixture.


  • Now adjust water into the mixture if need continue to sauté mushrooms.




  • Then add milk in it, this will increase the richness of your soup.




  • When you see mushrooms are fully cooked now add porcini water and truffle oil (few drops)in it.(for good aroma and flavor)




  • Mix them for a while now move away from flame let it cool.




  • Now make a smooth purée of this cooked mushroom mixture.



  • The base of mushroom soup is ready, that purée you can keep in a deep freezer for your next use(bonus point) 



  • Now get saucepan put some mushroom mixture purée add water into it boil for while adding salt and white pepper powder. Keep flame low now add cream into the soup as required if you want more creaminess than add more cream in it.



  • Turn off the flame put few drops of Truffle oil mix it well pour into soup bowl garnish with fried sliced mushrooms on top and serve hot with garlic bread(I will add the garlic bread recipe down below).

Ingredients:

Chop garlic - 5gms
Chopped fresh Parsley - 4gms
Butter salted - 20gm
Chilli flacks - 2gm






Cooking Method:
  • Get a small panini or bucket bread cut into slant style from top to end.
  • Now melt butter add chop garlic, chop parsley, and chili flakes into the butter.
  • After mixing them well put a good amount of mixture into slant whole of bread
  • Now bake or roast in the oven until golden color comes from the bread top
  • Voilà !!!! Ready your perfect Garlic bread.
