Easy falafel recipe
Falafel is a Mediterranean dish that actually originated in Egypt, and this was perfect vegan food in there. This is made with chickpeas and fresh herbs, and the good nice right spices, the falafel is enjoyed with a pita sandwich with tahini sauce or hummus so now I'm sharing the complete recipe down below along with the Hummus recipe.

- (one day in advanced) Soaked chickpeas in a large bowl filled with water leave it for the whole night till the next day before the cooking.
- Now add salt and baking soda into soaked chickpeas and boil at least 70% into the pressure cooker, drain the water keep the boiled chickpeas, and let it cool.
- Now grind(food processer would be very good) chickpeas along with onion, cumin powder, coriander powder, parsley, za'ater powder, tahini paste, pepper powder, chilli powder, garlic, lemon juice, salt, all of them together.
- Now the mixture of falafel is ready.
- Make a small patty of falafel from the mixture by hand and coat or dust with refined flour for getting stable patty.
- Now fry them in oil till golden brown.
- Serve hot with tahini sauce or hummus sauce(the recipe for hummus you get it down below).
Hummus:
Hummus is an Arabic word that means Chickpea, this sauce or spread made of chickpea, tahini paste, lemon juice salt, garlic, etc this is a great source of vitamin B and some proteins and a rich source of fiber, the hummus dish of the Middle East is now very popular in everywhere, hummus can be eaten as a dip, sauce, spread, along with sandwich or pita, wraps. I will tell you the exact recipe for hummus.

- (soaked chickpeas overnight)boil chickpeas the next day into the pressure cooker.
- Now keep all together mean boiled chickpeas and water from chickpeas both should keep it for the recipe.
- Now in grinder put chickpeas, lemon juice, olive oil, tahini paste, garlic, sumac powder, salt, Greek yogurt(optional), and some boiled chickpea water and ice cubes(for good smooth thick paste) grind till smooth paste you get.
- Check the seasoning of paste.
- Now your hummus is ready, put it in a ceramic bowl, and cover the hummus with olive oil.
- Garnish with smoked paprika and sumac powder and chopped parsley on top.
- Serve with Falafel or pita sandwich or wraps or whatever you want.
